Can someone shed some light on the differences or benefits of using JACK over JOAL?

Sorry, I can't tell you the difference/advantages.

We are using Jack, due to a former core-developer. As far as I know, he's one/the developer of the libpd-staff.

Yes, I had realised that by digging through the jReality credits page. It would be interesting to know how those two compare.
